It is incredible how many fantastic restaurants you’ll find in the region around Bruges and De Jonkman is one of the “must reservations” you have to make during your stay in one of the best gastronomic regions in the world.
The chef Filip Claeys loves simplicity, quality products as they are: just simply delicious. What once was the hunting lodge of the formerly famous castle Van Male, is today one of the most renowned culinary temples in the region.
Filip cooked for years alongside Sergio Herman van Oud Sluis as one of the most creative chefs in the world. His wife Sandra worked there for several years. Both decided to take over a restaurant: De Jonkman. Not only the environment is beautiful, even the private garden is a gem.
Chef Patron Filip Claeys was born in Brugge in 1974 and has spent his whole culinary career in Brugge or not far from it. A wise choice considering the fact that the region has several of the best restaurants in the world. After several years spent at some of the very best restaurants the Chef finally bought his own restaurant in 2006 together with his wife Sandra Claeys. The role as the Lady of the House is handled impeccably by Sandra and Filip’s innovation and focus on simplicity in the kitchen is flawless.
The great restaurant is located close to the heart of Bruges in Belgium. The property is located outside the Bruges ring, but is quietly hidden among the trees. What was once the hunting lodge of the castle of Male has been turned into a cosy restaurant with a fireplace, an intimate setting and a lovely staff to make sure that you feel more than welcome.
The products and natural flavours are always prevailing in this contemporary cuisine. Freshness is a must, and the chef only works with local seasonal products. Simplicity, pureness and first class products are of utmost importance for the chef at restaurant De Jonkman. Filip Claeys is one of those young rock’n roll chefs who has re-written the kitchen rule book. His fare is original, authentic and anything but mainstream. Provocative but with a sense of fun, as he likes to keep things into perspective. Passion that is reflected in two Michelin stars.
De Jonkman is open for lunch and dinner Tuesday till Saturday. We enjoyed an amazing lunch at Restaurant De Jonkman!
These were eight excellent and creative amuse, executed with great finesse. We started with a great variation of cold and hot appetizers with as absolute highlight: the hamburger of rumen on a bun from the Green Egg.
Then we enjoyed the refined and suberb ‘Pure Autumn Menu’ We started with Oyster with horseradish and kohlrabi, followed by Coquille with pumpkin and ras el hanout. After this we continued with a lovely vegetarian dish: porcini mushrooms with vanilla; loved this!
Then the fresh shrimps: the chef first showed his ‘animals’ to us: still alive and swimming in water… so incredible to see how this was presented. First Filip Claeys presented us with a glass jar filled with water and live grey shrimps. The jar was then taken back to the kitchen to prepare the dish and some five minutes later the bottle was served.
After this we were served the catch of the day and a little piece of meat: duck from Damme with kale & chestnut.
Our dessert was a apple stuffed with sweet & sour apple compote! Wow! With our coffees we were served some petit fours.
A well-balanced menu with amazing flavors and we loved every single dish!
We look back on a blissful lunch. Both the food, the wines and the service were top level, and at the same time always very ‘down to earth’ and warmly. Merci team De Jonkman!
